Palate: The wine has a firm backbone of tannin and an attractive, fleshy mid-palate, with a long, ripe finish.
This wine will reward careful cellaring for up to six years. Over this time, the primary berryfruit characters will diminish and be replaced by more complex flavours and aromas.
1999 was actually warmer than the highly acclaimed 1998 vintage. The grapes achieved good ripeness and high levels of colour and tannin. A feature of the vintage was the exceptional quality of the Merlot. This is reflected in the increased contribution of this variety in the final blend.

The 1999 Church Road Cabernet Sauvignon Merlot was made using largely Bordeaux-based winemaking techniques. This is reflected in the complexity of the wine.
Grapes were crushed to fermenters and the wine gently circulated over the skins for an extended period to extract colour, tannin and flavour. After draining from skins, the wine was encouraged to undergo malolactic fermentation in French barriques. The wine remained in barrels (1/3 new, 1/3 one-year old and 1/3 two-year old) for approximately 14 months to extract oak flavour, stabilise colour and evolve the tannins.
